Roasted Pepper HUMMUS

You can make your own hummus and yes, the store bought kind will never taste the same.

Makes about 2 cups

2 roasted red, green or yellow peppers, chopped Roasted PEPPERS recipe.

¼ cup water

2 tablespoons lemon juice

½ cup tahini paste

2 tablespoons extra virgin olive oil

1 can chickpeas, drained and rinsed

1 garlic clove, minced

½ teaspoons salt

¼ teaspoon ground cumin

1/8 teaspoon cayenne

1/8 teaspoon paprika

Combine water, lemon juice in a small bowl, set aside. Whisk tahini and oil in a second bowl, combine then set aside.  Process chickpeas, garlic and the rest of a spices in a food processor until coarsely ground, 15 seconds.  With machine running slowly pour in the water mixture.  Process until smooth about 1 minute.  Scrape bowl as needed.  With the machine running slowly add the tahini mix.  Process until smooth, about 15 seconds.  Add roasted peppers, pulse until the pepper is incorporated.  Salt and pepper to taste if needed.  Let set for 30 minutes before serving.
