Zucchini PIE
Makes Enough for a family for dinner
3 cups shredded zucchini, peeled
1onion, chopped
½ stick butter
1 egg
2 cups sharp cheddar
½ cup parmesan cheese
½ pound hamburger
Salt and pepper to taste
1 pie crust rolled out, chilled (Grandma Betty’s Pie Crust)
Preheat oven to 350 degrees. Sprinkle the zucchini with salt, let sit for about 20 minutes to release the water. Squeeze and drain. Place squeezed zucchini in a large bowl. Brown ground beef in a large skillet, remove from pan leaving the juices and fat in the pan. Add onions and cook until translucent. Combine zucchini, beef, sharp cheese and onion mix into the large bowl. Mix. Roll out the chilled pie dough and place in an 8 x 8 square pan, pressing into the corners. Pour in the zucchini mixture. Sprinkle the top with parmesan cheese. Bake until golden brown, about 1 hour.
