Tennessee Onions
Ingredients:
3 large sweet onions, sliced 1/4 inch
1 1/2 teaspoons of Cajun Seasoning
1 teaspoon garlic powder
4 tablespoons butter, cut into 8 small pieces
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1/2 teaspoon freshly chopped, oregano or chives or parsley.
1/2 cup grated parmesan cheese
Instructions:
Preheat oven to 350 degrees.
Arrange half the onions on the bottom of a 9x13 pan. Sprinkle with half the seasoning and garlic powder. Repeat with remaining onions, seasoning and garlic powder.
Place pieces of butter over the onions and top with cheddar and mozzerella. Sprinkle with the oregano and parmesan cheese.
Bake in the oven until onions are tender and cheese is bubbly and golden brown, about 35 minutes.
