Swiss Chard Salad

Ingredients

1 bunch swiss chard, ribs removed and ribbon cut
1 cup cubed bread
1 tablespoon oil
1 clove garlic
red pepper flakes, optional
zest from 1 lemon
1/4 cup shredded parmesan

Dressing

juice of 1 lemon
1 tablespoon Dijon
1/4 cup olive oil

Place the ribboned swiss chard into a large serving bowl. Place bread cubes in a food processor. Pulse until the bread is crumbs.

In a large saucepan, add the tablespoon of oil at medium high heat. Once the oil is hot, toast the breadcrumbs until golden. Add the garlic and red pepper flakes, cook for another minute. Cool slightly.

For the dressing, add the lemon juice, Dijon and oil into a small bowl. Whisk until fully incorporated.

Drizzle the dressing over the swiss chard and toss. Add toasted bread crumbs and shredded parmesan. Toss and serve immediately.
