Sweet Corn Relish

This is my easy to make, impress your friends, in season, tired or corn on the cob, corn recipe.  This relish pairs well with pork but can really be a side kick to any main dish.

4 cups of sweet corn, cut from the cob (about 4 ears of corn)

¼ cup sweet onions chopped

¼ cup green onions, chopped

1 teaspoon fresh garlic

2 Tablespoons fresh rosemary, chopped

2 Tablespoons apple cider vinegar

2 Tablespoons grape seed oil

1 Tablespoons walnut oil

1 tablespoon fine sea salt

½ tablespoon ground black pepper

Cook corn in salted boiling water for 7 minutes.  While the corn is cooking, dissolve the salt in the vinegar in a mixing bowl.  Whisk in the oils.  When the corn is done strain it and add along with the other ingredients.  Blend well and set aside to cool.
