Stuffed Zucchini
Ingredients
4 round zucchinis
1 pound pork sausage
1 cup bread crumbs
1 clove garlic
1 large tomato, cored and diced
1/2 cup grated parmesan cheese
1/2 cup shredded mozzarella
salt and pepper
Preheat the oven to 350 degrees.
Wash round zucchini and cup the top off an inch or so from the base of the stem. Scoop seeds out and place into a bowl, leaving a 1/2 inch or so wall inside the zucchini. Placed hollowed out zucchini in a 9 x 13 baking dish. Add the garlic sausage, bread crumbs, parmesan cheese, and a pinch of salt and pepper to the bowl with the scooped out seeds. Mix thoroughly. Stuff sausage mix into the round zucchinis and cover the zucchini with foil.
Bake zucchinis cover for 45-50 minutes or until sausage is brown. Remove foil and top with mozzarella cheese, and return to the oven for 15 more minutes.
