Simple Green Bean SALAD

Beans are one of those vegetables that I only eat fresh from the garden.  Even as winter hits I am not running out to buy green beans as my vegetable of choice.  When green beans are ready to harvest, there is a ton, so you better be ready to have a lot of green bean dishes on the ready.  Now I pickle my fair share of green beans into dilly beans but that is a canning pain in the butt.  So this simple salad is a great way to enjoy fresh green beans.

Serves a family for a side dish

1 ½ pound of fresh green beans

1 tablespoon finely chopping onion

1 teaspoon salt

Pepper to taste

1 tablespoon Dijon mustard

2 tablespoons red wine vinegar

¾ cup olive oil

½ teaspoon lemon juice

Wash green beans and cut into 2 inch pieces.  Steam the green beans for 5-6 minutes.  Rinse in cold water, drain and let chill.  Mix onion, salt, pepper, mustard, vinegar.  Whisk in olive oil and lemon juice.  Drizzle over beans and toss.
