Sautéed PEPPERS

Peppers, like onions, take on a sweet and savory taste when you sauté them, but they must be done right.  Back in the early days I would rush to get the peppers cut and into a scorching hot pan and as a result my peppers would be slightly burnt, undone and just generally not good.  These days, I like to start my peppers hours before we eat them.  I cut them up toss them in the pan and walk away, stirring occasionally.   Do not rush your peppers, they deserve better.

Serves a couple of burgers

2-3 medium bell peppers

1 tablespoon butter

1 tablespoon olive oil

Salt to taste

Pinch of sugar

Cut peppers into ¼ inch strips.  In a medium to large pan heat the butter and oil on medium low.  Put in the peppers.  Stir to coat.  Once the peppers have softened sprinkle with salt and stir.  Put stove to low and slowly cook for 1-2 hour, stirring occasionally.  10 minutes before serving sprinkle in a pinch of sugar and finish cooking.
