Sautéed Mustard Greens with BACON
.5 pounds mustard greens ABOUT 1 BUNCH
1/2 cups chicken broth
1 ounces thickly sliced bacon (about 4 strips), diced
1 small onion, chopped
1 clove garlic
1/2 teaspoon apple cider vinegar
Salt, to taste
Pepper, to taste
Optional: pinch of sugar
Optional: Dash of crushed red pepper flakes
Place bacon in a pot over medium high heat. Cook for 5-6 minutes or until crisp. Remove half of the bacon. Add chopped onions to the pot and cook with half of the bacon for 2-3 minutes or until the onion is translucent. Add garlic, salt and pepper and cook for 30 more seconds.
Add the greens to the pot and cook for 2-3 minutes or until wilted. Pour in the chicken broth, sugar and bring to a simmer.
Reduce heat to low, then cover the pot and simmer for 15 minutes or until greens are tender. Uncover and stir in the pepper flakes, and vinegar, cook for 1 more minute.
Garnish with bacon, then enjoy right away.
