Sauteed Green Rocket Cabbage

Ingredients

1 head of Green Rocket Cabbage
2-3 tablespoons extra virgin olive oil
1 clove garlic or 1 garlic scape, finely chopped
salt and pepper to taste

In a large saute pan heat 1-2 tablespoons of extra virgin olive oil, until hot. Add garlic and cook for 1-2 minutes.

While the pan is heating up, wash the cabbage and remove outer leaves and the core. Cut leaves very into thin strips. Add cabbage to the hot pan with garlic. and remaining olive oil. Toss/stir continuously. The leaves will reduce down. Cokk for 2-4 minutes. Add salt and pepper to taste. Enjoy!
