Sautéed Beet Greens

I never think about the greens of the beets as something I would like to eat, but when I grow so many beets it seems like such a waste to toss so much of the vegetable to the pigs.  So, I started to look for recipes for beets green and wow is there a lot.  Ultimately, I always ended up making sautéed beet greens.  They are easy and a great side dish with any meal.

Serves 2-4

Greens from two bunches of beets, washed and chopped

1-2 tablespoons Olive oil

2 cloves of garlic, minced

1 teaspoon crushed red peppers

Zest and juice of a half a lemon

Salt and pepper to taste

Heat the olive oil in a medium saucepan.  Add beet greens and garlic.  Cook and toss until the greens are tender.  Add red pepper flakes and lemon zest and juice.  Salt and pepper to taste.
