Sautéed Bok Choi

1 head bok choy, sliced, both white and green parts
1/4 cup onion, diced
1 teaspoon grated gingerroot, or 1/2 teaspoon powdered ginger
1 teaspoon olive oil
1⁄2 teaspoon dark sesame oil
1/2 teaspoon fish sauce
1 tablespoon rice vinegar
1 1⁄2 teaspoons sesame seeds
3 tablespoons chicken broth
crushed red pepper flakes (optional)

Clean bok choi. Cut into 1-inch pieces. Set aside. On medium heat, heat olive oil in a medium sauté pan. Add onions and cook for 3-4 minutes. Add the remaining ingredients and cook for another 8 minutes. Stir occasionally.
