Salsa Verde

Ingredients

1-pound tomatillos
1-2 medium jalapenos
1/2 onion, roughly chopped
1/4 cup cilantro leaves
3 tablespoons lime juice
salt to taste

Preheat the broiler on your oven. Put the rack about 4 inches away from the top of the oven.

Remove husks from tomatillo and lightly wash. Remove tops from the jalapenos and scape out the seeds. Place tomatillos and pepper on a rimmed baking sheet. Broil for 5 minutes. Flip tomatillos and peppers over and broil the other side for another 4-6 minutes or until the skins are slightly blackened and blistered. Set aside when finished.

In a food processor combine the onions, cilantro, 1 tablespoon of lime juice, and a pinch of salt. Once the tomatillos and peppers have slightly cooled, transfer to the food processor.

Pulse until mixture is mostly smooth with no large chunks remaining. Season with salt or additional lime juice if needed.
