Rosemary and Garlic Roasted POTATOES
All the ingredients in this dish that are grown in the garden can be kept for months in your kitchen until they are ready to use. So, you can make this dish as soon as the potatoes come into season or hold off until the winter.
Serves 4
2 pound medium potatoes, peeled and cut into wedges
3 tablespoons olive oil
5-6 large rosemary sprigs
4 large garlic cloves, smashed and peeled
Salt and pepper to taste
Heat oven to 450 degrees. Toss all ingredients in a bowl, coating all sides of the potatoes with oil. Spread potatoes onto a baking sheet and roast for 20 minutes. Loosen the potatoes with metal spatula and turn. Roast another 15 minutes. Loosen potatoes again, and roast for another 10 minutes or until edges are crispy. It all begins with an idea.
