Roasted Red Potatoes

 

Ingredients

8-10 small red potatoes, scrubbed and washed
2-3 cloves minced garlic
1 tablespoon fresh finely chopped herbs (thyme, rosemary, sage)
salt and pepper
2-4 tablespoons olive oil

Preheat oven to 425 degrees. Line a rimmed baking sheet with parchment paper.

Place potatoes, garlic, herbs and oil into a large plastic bag. Squeeze the bag to evenly coat the potatoes. Spread the potatoes onto the parchment lined pan and spread out into a single layer. Salt and pepper to your liking.

Place potatoes into the oven for 25-35 minutes or until potatoes give littler resistance when a steak knife is inserted and when the skin is crispy and golden. Add more salt if needed.
