Roasted GARLIC

It is important to know how to roast your garlic in order mellow out the bite but keep the flavor.  I like to use roasted garlic as a spread on my garlic cheesy breads.  It gives me all the flavor without the crunch and kick of raw garlic.

Makes about 2-3 tablespoons of roasted garlic paste

1 head of garlic

1-2 tablespoons olive oil

Salt

Heat the oven to 400 degrees.  Cut of the tops of the garlic head.  Do not peel the skin off the remaining garlic.  Drizzle with oil and sprinkle with salt.  Wrap garlic in tin foil and place onto a baking sheet.  Put in the oven for 30-40 minutes.  When done, remove and cool.  Then squeeze out the garlic cloves, use on anything.
