Roasted Delicata Squash
Ingredients
1 medium delicata squash, washed and dried
1 tablespoon butter, melted
1 tablespoon olive oil
salt and pepper to taste
Preheat oven to 425 degrees.
Trim both ends of the squash. Cut lengthwise and scoop out flesh and seeds. Placing squash cut side down, cut into 1-inch slices. Place squash onto a parchment lined baking sheet. Drizzle melted butter and olive oil over the squash. Add salt and pepper. Use your hands to evenly coat the squash with the butter, oil and salt and pepper.
Place in the oven. After about 12 minutes flip each slice and rotate the pan. Return to the oven for another 10-12 minutes.
