Rhubarb Syrup
Ingredients
4 cups chopped rhubarb
2 cups water
2 cups sugar, 1/2 cup more if you like it sweeter
Instructions
Bring rhubarb and water to a boil in a saucepan over medium-high heat. Reduce heat to medium and simmer until rhubarb is falling apart about 10-15 minutes.
Strain the rhubarb from the pan using s strainer and a cloth, gently press. Disczrd rhubarb, or use in another recipe.
Return the liquid to a clean saucepan still in sugar. Heat until the sugar is dissolved, about 2-3 minutes. Skim away any foam, let cool.
Store in the refrigerator for up to one week.
