Reduced Balsamic VINEGAR

This is my summer side kick.  When the tomatoes start coming in, I run to the store and buy the biggest bottle of balsamic vinegar I can find and huge package of goat cheese.  Tomatoes, goat cheese, and reduce balsamic vinegar, my version of the 3 amigos. 

Makes a whole lot less than what you started with

2 cups balsamic vinegar

2 – 4 Tablespoons honey or pure maple syrup

Add vinegar and honey to saucepot.  Bring to a boil, then reduce the heat and simmer until the balsamic coats the back of a spoon.  Drizzle on top of goat cheese, tomatoes or use for a salad.
