Rebel Pancakes

1 Package Rebel Pancake Mix
1/3-1/2 cup buttermilk (make your own with milk and a splash of vinegar)
2 eggs

Heat a griddle with 1 teaspoon of vegetable oil and 1 tablespoon of butter. Empty the dried mix into a large bowl. Break up any large chunks with a fork. Add most of the buttermilk and eggs. Stir slightly. If the batter is too thick add more buttermilk. When the griddle is heated and ready drop 1/4 cup of batter onto the griddle. Flip after 1-2 minutes. Should be golden brown on both sides.
