Rebel Buttermilk Biscuits
1 package of Rebel Buttermilk Biscuit Mix
1 cup cup butter milk (if you do not have buttermilk use 1 cup of milk with 1 teaspoon of vinegar. Stir and let sit for 5 minutes.
Keep mix in the freezer until ready to use. Empty the packet into a large bowl. Using your fingers pinch any large butter chunks. Add most of the buttermilk. Mix well with a wooden spoon. Dough should be slightly sticky, but workable. If it is too dry add more of the buttermilk.
Dump dough onto a well floured surface. Pat into a 8 inch circle about 1 inch thick. Using a floured biscuit cutter (I sometimes use a canning jar lid) stamp out the biscuits, do not twist. Place onto a parchment lined baking sheet. Place baking sheet in the freezer for 10 minutes.
Heat oven to 450 degrees. Place biscuits in heated oven. Cook for 5 minutes. Then turn down the oven to 400 degrees and back for 10-15 minutes until golden brown. Remove from oven and enjoy.
