Quinoa Tabouli

 

Ingredients

1 cup quinoa
2 cups water
1 pint cherry tomatoes
1 red pepper, chopped
1 cucumber, finely chopped
10 Mint leaves, copped
1 bunch Parsley, chopped
1 small red onion, chopped
3 cloves garlic, minced
1/4 -1/3 cup lemon juice
1/4 cup olive oil
1 tablespoon oregano chopped
salt and pepper to taste
splash of vinegar (optional)

Clean quinoa by rising through a fine mesh colander. Pour the 2 cups of water in a medium pot, bring to a boil. Once the water starts to boil, add the rinsed quinoa. Bring the water back to a boil. Reduce heat to simmer and cover. Continue to simmer for 10-15 minutes, or until the quinoa has absorbed all of the water. Remove from heat and fluff quinoa with a fork.

Let the quinoa cool and add in the rest of the ingredients. Add vinegar or salt and pepper to taste.

Cover the salad and let chill in the refrigerator for a few hours or overnight.
