Quick Pickled Onions
3 small onions, or 1 large onion
1/2 cup water
1/5 white vinegar
1/4 cup apple cider vinegar
1 1/2 tablespoons honey
1 1/2 teaspoons sea salt
1/4 teaspoon red pepper flakes (optional for a kick)
Slice they onions as thin as possible. Place sliced onions in a mason jar.
Place the remainder of the ingredients into a sauce pot, and bring to a boil. Carefully pour hot vinegar mixture over onions. Let sit until onions comes to room temperature. Enjoy on anything, but pork tacos are my favorite.
