Quick Pickled Cabbage

1 1/2 cups rice vinegar
1/2 cup water
3/4 cup sugar
1 teaspoon salt
3 garlic cloves
4 red chili peppers, optional
1 large Green Rocket Cabbage (any will do in a pinch)
1 peeled and grated carrots
2 tablespoons salt

Rip cabbage into bite size pieces and place in a large bowl. Add salt and let sit for 30 minutes. After 30 minutes rinse and drain cabbage.

In a saucepan, place vinegar, water, sugar, salt and cloves, bring to a boil. Pour hot vinegar mix over the rinsed and drained cabbage. Let cool to room temperature.
