Polish Rhubarb Honey DRINK
Move over lemonade the new summer drink is here. Okay, so maybe this will not replace lemonade, but it sure is a great drink for kids, or spiked for the adults.
Serves 4
4 cups water
½ cups honey
1 pound rhubarb, chopped
3 cups hot water
Garnish with Mint
In a pot, bring the 4 cups of water to a boil. Stir in honey, set aside to cool. Place rhubarb in a food processor, pulse until the rhubarb forms a pulp and place in a medium sized bowl. Pour the 3 cups of hot water over the rhubarb. Chill for 2 hours. Place a sieve over the pot of honey water. Strain the rhubarb pulp through the sieve and into the honey water. Stir and pour into a pitcher. Place in the refrigerator to cool. Enjoy with gin, vodka for a cocktail.
