Perfect Spaghetti Squash SPAGHETTI

I am not always looking to take carbs out of my diet, but occasionally I would rather have the sweet taste of spaghetti squash over the popular noodles.  I have been able to winter store my spaghetti squash all winter long, and at this point I really do not miss the boxed noodles.

Serves 3-4

1 large spaghetti squash, halved and seeded

1-2 tablespoons butter

Salt and pepper to taste

Preheat your oven to 350 degrees.  Place squash cut side down, on a parchment lined baking sheet.  Place in the over for 1-2 hours.  Check for doneness by pressing on the top.  If it is soft, then it is done.  When you are ready to serve take it out of the oven, turn it over, and place butter on the inside.  Spread the butter in the squash until it is melted.  Season with salt and pepper.  To take out the “noodles” use a fork to scrape the bottom on the squash.  Plate and serve.
