Peanut Butter BALLS

I started making this for my kids when they started needing snacks for school.  Originally, I was buying granola bars that they loved, but honestly it felt more like a candy bar than a light snack, plus it was getting kind of expensive.  So, started making my own version of a snack that would taste good, traveled well, but also had some readable ingredients.  After lots of trails I found a recipe that not only worked for my children, but also satisfied my mid-day sweet snack.

Make 15-20 Balls

¾ cup old fashioned oats

¾ quick cooking oats

1 cup peanut butter

1-2 tablespoons honey

1 tablespoon chia seeds

1/3 cup semisweet chocolate chips

Mix all ingredients in a large bowl until well combined.  If the mix is too sticky, add some quick cooking oats.  If the mix is crumbly and falls apart, add more peanut butter.  The mix should be slightly sticky, but you could still work it with your hands.  Working with about a tablespoon at a time, roll the dough until it forms a ball.  Repeat with remaining dough.  Store in a plastic bag or sealed container.  Store in the refrigerator.
