Pasta, with Buttered Sage

 

Ingredients

1 lb of your favorite pasta, ziti works well
3 tablespoons butter
30 fresh sage leaves
1 c freshly grated parmesan cheese

Bring a large pot of water to a boil, and salt it. Cook the pasta until it is almost done, but still has a slight bite to it.

In a large saucepan, on medium heat, melt butter. Add sage and cook until the butter turns a golden brown and the sage shrivels. Turn the heat down low.

When the pasta is just about done, scoop out 1 cup of the pasta water and set aside. Drain the pasta and immediately the place the pasta into the butter-sage mixture. Raise the heat to medium and add 3/4 of the reserved pasta water. Stir while cooking for 30 seconds, or until the water is absorbed and the pasta is perfectly done.

Stir in cheese, the sauce should become creamy. Thin with the remaining water only if necessary. Salt and pepper to taste. Serve immediately.
