Oven Roasted Dill Potatoes

 

Ingredients

1- 1 1/2 lbs. golden potatoes, cut into 2-inch chunks
2 tablespoons olive oil
1 tablespoon of butter, melted
1 teaspoon minced garlic
salt and pepper to taste
1-2 tablespoon fresh dill, roughly chopped
2 teaspoons fresh lemon juice

Heat oven to 450 degrees. Place potatoes in a large bowl.

Stir together olive oil, butter, garlic in a small bowl. Pour over the potatoes and toss to coat. Season with salt and pepper, then transfer to a parchment lined baking sheet.

Bake potatoes in preheated oven for 15- 20 minutes turning the potatoes halfway through. Bake until the potatoes are fork tender.

Remove from oven and sprinkle with fresh dill and the lemon juice, Toss and serve.
