Quick Pickled Green Onions
Ingredients
For the Brine
1/4 cup white vinegar
1/4 cup water
1 teaspoon sugar
1 teaspoon salt
Pickles
1 bunch green onions, any color
1 clove of garlic, or garlic scapes
1/2 teaspoon roughly chopped dill, (optional)
Instructions
Place the brine ingredients into a small saucepan. Bring to a boil, stirring until sugar and salt have dissolved. Remove from heat and cool slightly.
Clean green onions by trimming the roots and washing away any remaining dirt. Trim onions to fit into a 1/2 pint jar. Pack garlic and dill into the jar, then pack the onions tightly into the jar without smashing or breaking.
Pour slightly cooled brine over the onions. Let cool to room temperature. Place the pickles in the refrigerator for 48 hours. Enjoy.
