Sugar Snap Stir Fry
Ingredients
1 teaspoon rice vinegar
1 teaspoon toasted sesame oil (any oil will work fine here)
1 teaspoon maple syrup (honey or agave works here as well)
1 teaspoon of your favorite oil
2 cloves are garlic
1/2 teaspoon of freshly grated ginger (powder is fine too)
10 oz of sugar snap peas, about 2 cups
1 teaspoon sesame seeds
2-3 green onions, chopped
In a small bowl combine vinegar, sesame oil and maple syrup. Set aside. In a large skillet over medium-high heat add your favorite oil. Once heated, add garlic and cook for 1-2 minutes.
Add sugar snap peas to the skillet and sauté for 3 minutes, constantly stirring. Add vinegar mixture and continue to cook for another 2-3 minutes. Remove from heat. Salt and pepper to taste. Garnish with green onions and sesame seeds. Serve warm.
