Cucumber Buttermilk SOUP
Yes, soup in the summer. Sometimes a light and fresh meal is all that is need during those hot summer days. Best of all, this soup does not require you to turn on the oven or the stove. Cool and crisp soup ready as soon as you get the vegetables chopped.
Serves 4-6
6 cups peeled and chopped cucumbers
½ cup chopped scallions (minced onions work fine here as well.
2 tablespoons minced fresh cilantro, mint or dill
2 cups of buttermilk (I like to use half buttermilk have whole milk or all milk if I am out of buttermilk)
1 cup sour cream (yogurt is yummy too)
3 tablespoons lemon juice
1 teaspoon of salt or more to taste
Combine all ingredients in a blender or food processor until smooth. Serve cold and top with chopped cucumbers, tomatoes, fresh herbs or a dollop of yogurt.
