Radish and Onion Slaw

Ingredients

1-bunch Rebel Radishes, thinly sliced
1 small spring onion, any color will do, thinly sliced
1 teaspoon salt
1/4 cup white wine vinegar, apple cider vinegar works too
2 Tablespoons virgin olive oil
salt and pepper to taste

Combine the thinly sliced radishes and onions into a bowl. Sprinkle with salt. Gently rub the vegetables with your fingers until their juice is released. 1- 2 minutes. Let the vegetables rest for 8-10 minutes. Pour off the liquids, and squeeze the vegetables lightly to release extra moisture. Add the olive oil and vinegar, toss to coat. Salt and pepper to taste.

Slaw can be made 3 days ahead of time.
