Maple Bacon Green BEANS
Alright so I am jumping onto the maple bacon bandwagon that seems to have taken over the cupcake world. But I think maple and bacon and green beans have been around for quite a bit longer. I remember having green beans and bacon over the holidays. But do not save this recipe for the winter, this should be enjoyed whenever the 3 amigos (bacon, maple syrup and green beans) all find themselves in your kitchen.
Serves a family as a side dish
1 ½ pounds green beans
4 strips if bacon
1 onion, chopped
1 teaspoon soy sauce
1/3 cup cranberries
¼ cup maple syrup
¼ teaspoon salt
¼ teaspoon pepper
Bring a large pot of salted water to a boil. Add green beans and cook for 6-9 minutes. Drain the green beans and rinse in cold water. Set aside. Cook bacon in a skillet. Remove and place on a paper towel. Set aside. In the same pan, add the onions, cook until soft. 3-4 minutes. Add the soy sauce cranberries, maple syrup, salt, and pepper. Mix. Add the green beans and stir to coat. Remove from heat. Sprinkle with bacon and serve.
