Lemon Vinaigrette
Ingredients:
1/4 cup fresh lemon juice
1 clove of garlic or 1 garlic scape, minced
1 teaspoon dijon mustard
pinch of sea salt and pepper
1 teaspoon honey or maple syrup
1/3 cup extra virgin olive oil
1 teaspoons freshly chopped basil, thyme, or mint
Whisk the lemon juice, garlic, mustard, salt/pepper, honey into a pint mason jar. While whisking, drizzle in oil slowly until emulsified. Add herbs, tightly close jar with a lid and shake. Enjoy! Store in the refrigerator for 1-2 weeks.
