Lemon Thyme VINAIGRETTE
Serves about 4
2 tablespoons fresh lemon juice
1 ½ tablespoons chopped fresh Thyme
1 tablespoon Dijon mustard
½ teaspoon salt
½ teaspoon pepper
¼ cup extra virgin olive oil
Whisk together all the ingredients except for the oil. When thoroughly mixed slowly add the oil in a steady stream while constantly whisking. Whisk until smooth.
