Lemon Lavender Muffins
1 package of Lemon Lavender Dry Muffin Mix
1/2 cup whole milk or yogurt
4 tablespoons of lemon juice
zest of one lemon
1 egg
6 tablespoons vegetable oil or melted butter
For the Glaze
1 cup powdered sugar
2-3 Tablespoons fresh lemon juice
Preheat oven to 350 degrees. In a large bowl mix together the wet ingredients including lavender and lemon zest with a whisk. Using a rubber scraper add in the dry mix. Mix until just combined.
Grease 10-11 muffins cups. (I know its annoying it does not do a full dozen). Fill the cups 2/3 of the way full. Bake at 350 degrees for 20-25 minutes. Insert a toothpick and if it comes out clean then its done. Let cool for 10 minutes before topping.
In a small bowl stir together the powdered sugar and lemon juice. Dip the slightly cooled muffins tops into the glaze. Or drizzle.
