Lemon Garlic Bok Choi
Ingredients
1 head of bok choi
1 1/2 tablespoons of extra virgin olive oil
3 cloves of garlic or 2 garlic scapes
Pinch of red pepper flakes
salt and pepper to taste
half of a lemon
Trim Bok choi to remove outer and unsightly leaves. Separate the leave and wash well. Dry the leaves. Chop Bok choi into 1- 2 inch pieces.
In a large frying pan, add oil, garlic and red pepper flakes on medium high heat. Stir occasionally until oil begins to pop and garlic starts to cook, 2-3 minutes. Place chopped Bok choi into the pan and sprinkle 1/4 teaspoon of salt. Let cook with very little stirring for 2-4 minutes. Leave should soften but still have some crunch.
Transfer Bok choi to a plate and squeeze lemon juice over the top. Salt and pepper to taste. Enjoy/
