Kohlrabi Slaw

Ingredients:

1 Kohlrabi, peeled and cut into matchsticks
1 cup carrot, peeled and shredded
1 apple, cut into matchsticks
1 small onion, thinly sliced
2 tablespoons chopped parsley
2 tablspoons olive oil
1 tablespoon apple cider vinegar, or white wine vinegar
1 tablspoon maple syrup, or honey or granulated sugar
1/2 tablspoon Dijon Mustard
salt to taste

In a large bowl add the oil, vinegar, syrup and mustard and whisk until well blended. Add the chopped kohlrabi, carrots, apple and onion. Toss until the vegetables are coated. Add in the chopped parsley sand salt. Enjoy
