Grilled Peppers

 

Ingredients

5 bell peppers, quartered and white flesh removed (red, red, yellow, purple)
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper

For the Marinade
2 tablespoons balsamic vinaigrette
2 tablespoons olive oil
1 tablespoon Dijion mustard
1 garlic clove
1 teaspoon fresh thyme, plus extra for garnish
salt and pepper to taste

Pre-heat outdoor grill, or indoor grill pan. Place peppers in a bowl with the olive oil, salt and pepper. Toss to coat. Grill peppers 4-5 minutes each side, or until grill marks appear to your desire.

For the marinade, whisk together balsamic, olive oil, Dijon, garlic thyme, salt and pepper into a large bowl. Set aside. When the peppers are done, immediately toss them in the marinade and let sit for 15 minutes or so at room temperature. Sprinkle with extra thyme and salt and pepper to taste. Serve.
