Grilled Garlic SCAPES
Scapes are on of those garden wonders that never make it to the super market but are essential for growers to harvest. Scapes are a biproduct of garlic, and it needs to be harvest early otherwise it takes energy away from the growing garlic. Lucky for us, scapes are perfect for a mild garlic flavor that can be added to any dish. So, while you may not see then in the market you can use them just as you would garlic.
Serves a group a side dish
I bunch garlic scapes
1-2 tablespoons olive oil
Salt and pepper to taste
Fresh squeezed lemon juice
Place scapes onto a baking sheet. Drizzle with oil, salt, and pepper. Coat the entire scape. Place them on your already heated grill over the direct heat. Cook for about 2 minutes, flipping halfway through. Plate. Drizzle the fresh lemon juice over the scapes and season with salt and pepper.
