Garlic Scape PESTO
1 bunch or 5 garlic scapes (about 1/2 cup chopped)
1/4 cup packed basil
1/4 cup walnut pieces
1/4 cup parmesan cheese
1 teaspoons lemon juice (from 1/2 lemon)
1/4 cup olive oil
Salt and pepper, to taste
In a high speed blender or food processor, add garlic scapes, basil, walnuts, parmesan cheese, lemon juice and pulse until combined.
With the blender running slowly add the oil until the pesto is emulsified.
Salt and Pepper to taste
