Garlic Parmesan Sugar Snap PEAS

 

Sugar snap peas are like candy for children.  I put in them raw, in a bowl and set them on the counter and watch this once full bowl of peas become emptier by the hour.  It is the perfect summer snack that no parent minds how much they eat.  Unless of course you have tried garlic parmesan sugar snap peas, and children eat all the peas before you were able to put some aside for this tasty side dish.  Do yourself a favor, hid them, and hand your children some chocolate so they stay away from your peas.

Serves a family as a side dish

3 cups sugar snap peas, trimmed, rinsed, and washed.

3 tablespoon olive oil

2 cloves garlic, finely chopped

½ cup dried breadcrumbs

¼ cup grated parmesan cheese

2 tablespoons freshly chopped parsley (optional)

Salt and pepper to taste

Preheat oven to 400 degrees.  Combine sugar snap peas and olive oil in a mixing bowl.  Toss to coat.  In another bowl, mix breadcrumbs, cheese, parsley and salt and pepper.   Add peas and breadcrumbs together and toss.  Spread onto a prepared baking sheet.  Roast for 15-20 minutes or until crispy, turning once.
