Garlic Bok Choi
Ingredients
1-2 tablespoon oil, extra virgin olive oil, sesame oil
2 garlic cloves, or 1 garlic scape
1 small onion, any color
1 head of Bok Choi
1/4 cup soy sauce
In a small sauce pan heat the 1/4 cup of soy sauce on medium low heat. Reduce the sauce in half. Once the soy sauce has slightly thickened, set aside. In a large pan, heat the oil on medium high heat. Add the garlic and onions and cook, stirring frequently to avoid burning. Add bok choi and reduced soy sauce and 1 tablespoon water and cover with a lid. Cook for 1 minute. Uncover and stir, then cover again until the bok choi is tender, about 4 more minutes.
