Fresh Mint Dressing

 

Ingredients

1/2 c extra virgin olive oil
1/2 c fresh lemon juice (about 2 lemons)
1/4 c packed mint leaves
3 tablespoons honey or maple syrup
1 tablespoon Dijon mustard
2 gloves garlic, or 2 stems of garlic scapes
salt and pepper to taste

Combine all of the ingredients into a food processor. Blend until smooth. Salt and pepper to taste.

Place into a jar with a cover and refrigerate. Use within 5-7 days.
