Eggplant STEAKS
For me, eggplant is something I enjoy only in season. I will buy carrots from the store but my eggplant must be fresh from the garden. Rather than thinking me a food snob, I would like to think I am being picking. Eggplant, in my opinion, is my least favorite of all the garden vegetables albeit tasty, I do not choose to eat this often. So, when I do eat eggplant, I want it at its maximum peek of tastiness, which is fresh right from the garden. Since I already have the grill going in the summer what better way to cook an eggplant.
Serves 4
2 medium eggplants, trimmed and slices into ¼ inch steaks
3-4 tablespoon olive oil
1 tablespoon steak seasoning
Salt and pepper to taste
Heat the grill to medium-high heat. Drizzle eggplant with olive oil, steak seasoning and salt and pepper, repeat on both sides. Grill 2-3 minutes preside. There should be grill marks, and the eggplant should be tender.
