Cucumber Salad

Ingredients

2-3 cucumbers, thinly sliced and some skin removed (I prefer stripes)
1 teaspoon salt
1 red onion, thinly sliced
1/3 cup sugar
1/2 cup white vinegar
1/4 cup water
1 1/4 teaspoon salt
1/2 teaspoon pepper
1/4 cup fresh dill
3 tablespoons fresh mint, chopped

Add water, vinegar and sugar to a medium saucepot. Heat on medium/high heat and stir until the sugar is dissolved. Remove from heat. Place thinly sliced onions into the saucepan with the vinegar. Let sit while you prepare the cucumbers.

Place thinly sliced cucumbers in a large bowl, sprinkle with salt and toss to cover. Let cucumber sit for an hour to release the water. After resting drain the cucumbers and place them in a large bowl. Chop fresh dill and mint. Pour vinegar mixture over cucumbers. Sprinkle with the dill and mint. Toss and serve.
