Crispy Fried Leeks
1 medium leek, trimmed and cut into thin slices, rings separated
1 teaspoon salt
2-3 tablespoons flour
1 teaspoon fresh thyme
1 teaspoon fresh sage chopped
1 teaspoon garlic powder
1 teaspoon onion powder
pinch of salt and pepper each
1 cup frying oil (I use vegetable)
Place sliced leeks into a bowl and sprinkle with salt, cover. Let leeks sit for 1-2 hours.
Prepare the oil. In a medium sauce pan cover the bottom with 1/2 inch oil. Amount of oil will vary depending on the size of your pan. Heat on medium-high heat.
Drain leeks, and pat them dry. In a large bowl, mix the remaining ingredients. Toss the leeks to generously coat.
Test a leek in the oil to see if the oil is heated properly. Once ready, fry in small batches. When finished, place leeks on a plate lined with a paper towel. Salt and pepper to taste. Enjoy right away.
