Creamy Tomato DRESSING
My mother can walk into any kitchen and make a salad dressing without any help, in fact she would prefer it if you did not get in the way. She is always using ingredients that I would have never thought to put into a dressing and every time it is the best. This is one of those recipes that takes what you have on hand and makes it into a dressing worthy of putting on anything, including lettuce.
Makes about 2 cups
1 cup halved cherry or grape tomatoes (if you use big tomatoes squeeze out the juice first)
½ cup mayonnaise
¼ cup fresh basil leaves
1 clove garlic
1 Tablespoon of fresh lemon juice
Puree tomatoes, mayo, basil garlic and lemon in a food processor to desired consistency. Salt and pepper to taste. If the consistency is too thick put in a splash of milk.
