Creamed Peas

 

Ingredients

1 tablespoon unsalted butter
1/2 tablespoon flour
1 clove of garlic, minced
salt and pepper
1/2 -1 cup of milk, or half and half
pinch of nutmeg
1 tablespoon heavy whipping cream

In a medium saucepan, melt butter on medium heat. Add garlic and cook for another minute. Whisk in the flour and cook until the flour is cooked, about 1-2 minutes. Slowly whisk in 1/2 cup of milk and stir frequently until the sauce has thickened. If the sauce is too thick, add a little of the milk at a time.

Add the peas, continue to cook until peas are desired tenderness. Add salt and pepper to taste and the pinch of nutmeg. Stir in heavy cream. Garnish with additional butter, fresh herbs, and salt and pepper to taste.
